Run Rabbit, Run: Easter Bunny Cupcakes

img2The kids might be back at school right after Easter this year, but that doesn’t mean the Easter fun has to end! Our Easter-themed cupcakes will keep Easter alive right into the school holidays-and they’re certain to be a lunchbox hit, too!

Ingredients:

1 quantity vanilla cupcakes-we used Betty Crocker’s
1 cup flaked, moist coconut
½ cup castor sugar
2 drops pink food colouring
24 blue mini M&Ms
12 marshmallows
1 packet mini marshmallows
1 tube pink writing icing

Icing:
250g softened butter
1 teaspoon vanilla extract
600g icing sugar
2 tablespoons milk

Method:

1.In a large bowl, cream together the butter and vanilla
2.Blend in the icing sugar-a quarter at a time, beating well after each addition
3.In a separate bowl, add the food colouring and the castor sugar and mix well to colour
4.Take a cupcake and generously coat the top in vanilla icing. Dip in the flaked coconut
5.Take a marshmallow and cut it in half, diagonally. Squeeze in an ear shape and dip one side in the pink sugar. Dab some frosting on the other side and place on the cupcake. Repeat with the other half of marshmallow
6.Place two mini M&Ms for eyes
7.Take a pink mini marshmallow and place round side up for the nose
8.Place two white mini marshmallows under the nose for teeth
9.Use the pink writing icing to draw on whiskers
10.Enjoy!
